My healthy version of the traditional (and usually very meaty, cheesy, and fatty) breakfast sandwich.
12 Grain Toast
1 sliced up light mini baybel cheese
1 egg white, scrambled
6 onion pieces lightly seared in an oil free pan
Not vegan, but is vegetarian and very high in protein! If you wanted to make it vegan you could easily loose the cheese and replace the egg white for tofu!
